We sat down with Natasia and Paul from Flipadelphia , a burger joint inside Abingdon Street Market, which has built a strong following over the past two years. The team behind Flipadelphia is passionate about creating top-quality food, inspired by their travels and a deep love for their hometown.

Flipadelphia was founded by Steph, Paul and Natasia (L-R) with the goal of introducing a fresh, burger experience to Blackpool. “We started Flipadelphia because we wanted to do something in Blackpool, we’re from here, and we wanted to be part of something exciting in the town.”
Their journey began when they were introduced to Abingdon Street Market, a newly revived food hall that was bringing together some of Blackpool’s most ambitious independent food businesses. The concept was a perfect fit—allowing them to focus entirely on delivering great food while being part of a larger hospitality hub.
“We knew the operations team and what they did with Dirty Blondes, and we thought collaborating with people who share the same vision would be the best way forward,” they say. “It’s about bringing that northern, independent vibe and giving people something different.”
One of Flipadelphia’s biggest achievements has been creating a strong, recognisable brand that keeps customers coming back. While Blackpool has plenty of food options, the team wanted to ensure their burgers stood out. “At first, we used a simple salt-and-pepper seasoning, but we realised there were already lots of places doing that,” they explain. “So, we went back to the drawing board and created our own unique burger seasoning. Every element of our food—from the steak seasoning to the red salt fries—is designed to be different and memorable.”

They’ve built a loyal local customer base, with many regulars coming back week after week. “People think Blackpool is just tourists, but we see the same orders every week from local customers,” they say. “That’s how we know we’re doing something right.”
A big influence on Flipadelphia’s menu comes from their frequent trips to the United States. “We go to Florida every year,” they share. “We love the food culture out there—it’s bold, creative, and always evolving. Every time we visit, we come back with new ideas.” Their American-inspired menu items, like their signature mozzarella slab, reflect this passion for bold flavours.

For Flipadelphia, the most exciting part of being in Blackpool’s hospitality industry is the constant challenge of staying ahead. “You can never rest,” they say. “You always have to be creative, try new things, and keep adapting. But that’s what makes it exciting.”
Blackpool’s food scene is increasingly shaped by passionate independent businesses, each bringing something unique to the table. “There’s so much creativity here,” they explain. “You can see it in places like Dirty Blondes, Abingdon Street Market, and other small independents in the area. Everyone is working hard to build something special.”
As for what’s next, Flipadelphia has plenty of ambitions. “We definitely want to expand in the future,” they reveal. “There are properties in Blackpool we’ve got our eye on, and we’re always open to new opportunities.” However, they’re not looking to simply copy and paste their existing brand. “We don’t want to do the same thing over and over again,” they explain. “Each location should have its own personality and identity while keeping that same focus on quality.”
Their long-term goal is to keep pushing boundaries in the hospitality industry while staying true to their roots. “We’re from Blackpool, and we’re proud to be part of this town’s food scene,” they say. “We just want to keep growing, keep improving, and keep serving great food to the people here.”
